Meijer Bargain recipe of the week: Smoked Sausage Fritatta

Bargain Meal of the Week

Sometimes when I have just had enough of cooking, I flip it and serve breakfast. I love this recipe because it combines a heartier meat and tons of protein. I hope it shakes things up at your house!

I will not expense spices/oils since most of us have them on hand.

Smoked Sausage Fritatta


1 1/2 cups smoked sausage, sliced (On sale $1.79) $1.79
1/4 cup diced onion (3 lb bag on sale $1.50) $.15
6 eggs $.48
1/2 cup milk (On sale gallon $1.59) $.13
1/4 cup sour cream (On sale Daisy $1.39)$.17
salt and pepper to taste
1 1/2 cups shredded Cheddar cheese, divided $1.12


Preheat an oven to 400 degrees

Cook the sausage and onion in an oven-proof skillet over medium heat until the sausage has browned, about 10 minutes. Drain excess grease from the skillet. Whisk together the eggs, milk, sour cream, salt, and pepper. Sprinkle the sausage with 1 cup of the Cheddar cheese, then pour the egg mixture overtop.

Bake in the preheated oven until a knife inserted into the center comes out clean, about 18 minutes. Sprinkle with the remaining Cheddar cheese, and return to the oven until the cheese has melted. Cut into wedges to serve.

Meijer Bargain Recipe of the week: Rigatoni with Italian Chicken

This recipe sounds delicious to me!! I love pasta dishes with chicken.... yum! Pair it with green beans, or a salad. Happy eating Y'all!!

Rigatoni with Italian Chicken



4 skinless, boneless chicken breast halves (On sale Tyson $1.99) $1.99
2 cups Italian salad dressing ( Wishbone on sale $.99 W/C $.49) $.24
1 (16 ounce) package uncooked rigatoni pasta (Ronzoni pasta on sale $.99) $.99
1 (28 ounce) can diced tomatoes with Italian herbs (Red Gold on sale $.79) $.79
1/4 cup butter
1/4 teaspoon crushed red pepper flakes
1 cup grated Parmesan cheese $.50
1 tablespoon dried parsley



Place chicken breasts in a large resealable plastic bag, and pour in the Italian dressing. Seal bag, and marinate chicken 30 minutes in the refrigerator. Drain, discarding dressing, and dice.


Bring a large pot of lightly salted water to a boil. Add rigatoni and cook for 8 to 10 minutes or until al dente. Drain, transfer to a large bowl, and toss with diced tomatoes.


Melt butter in a skillet over medium heat. Place chicken in the skillet, and season with red pepper. Cook and stir 15 minutes, or until chicken juices run clear. Serve over the pasta. Top with Parmesan cheese, and garnish with parsley flakes.

Meijer Bargain recipe of the week: Super Simple Chicken Dinner

Bargain Meal of the Week

I am all about simple and easy so this recipe jumped out at me! I usually buy boneless chicken breasts but the prices of bone in chicken is just too good to pass up! Feel free to add extra spices......Happy Eating!

Super Simple Chicken

4 bone-in chicken breast halves, with skin (On sale $99/lb) $1.50
4 tablespoons butter $.25
1 tablespoon dried basil
1 teaspoon garlic salt


Preheat oven to 350 degrees

Place chicken breasts in a lightly greased 9x13 inch baking dish or roasting pan. Mix butter and seasonings together. Spread on Chicken.

Bake at 350 degrees for approximately 1 to 1 1/4 hours.

Total Cost of Meal: $1.75

Meijer bargain recipe of the week: Honey Mustard Grilled Chicken

I know I have promised more fall type foods, but this recipe sounded so great. With many of the ingredients being on sale, I couldn't pass it up to try out this week. Have a yummy week!!

Honey Mustard Grilled Chicken

1/3 cup Dijon mustard $.50
1/4 cup honey $.40
2 tablespoons mayonnaise (On sale w/c $1) $.5
1 teaspoon steak sauce (On sale and w/c free - $1) $.5
1 lb boneless chicken breast halves (On sale $1.79/lb) $1.79


Preheat the grill for medium heat.

In a shallow bowl, mix the mustard, honey, mayonnaise, and steak sauce. Set aside a small amount of the honey mustard sauce for basting, and dip the chicken into the remaining sauce to coat.

Lightly oil the grill grate. Grill chicken over indirect heat for 18 to 20 minutes, turning occasionally, or until juices run clear. Baste occasionally with the reserved sauce during the last 10 minutes. Watch carefully to prevent burning!

Meijer bargain recipe of the week: Creole Pork Chops

Can you tell I am ready for fall? I am starting to think hearty, filling, yummy meals. This recipe can also be made in the crock pot for 5-6 hours. Y'all know I love that !! I hope its as yummy as it sounds..... Happy eating!

Creole Pork Chops


4 pork chops (On sale $1.99) $1.99
2 tablespoons all-purpose flour
1 tablespoon vegetable oil
1 can diced tomatoes (Hunts on sale $1.25) $1.25
1 green bell pepper, seeded and chopped (On sale $.99/lb) $.40
1 onion, chopped $.20
1 tablespoon Worcestershire sauce
1 1/4 teaspoons salt


Coat the pork chops with flour, shaking off the excess. Heat the oil in a large skillet over medium-high heat. Add pork chops and cook until browned on each side, about 5 minutes per side. Reduce heat to low and add the tomatoes, bell pepper and onion. Season with Worcestershire sauce and salt. Cover and simmer for about 1 hour, until chops are fork tender.

Total Cost of Meal: $ 3.84

Meijer Recipe of the week - Italian burgers

This is not much of a recipe but summer is coming to an end. I am going to try to stuff as much burgers, salads, fresh fruits and grilled dishes in before I get my crock pot out and start to do my happy fall dance. :) I am always looking for ways to shake up our standard burger and this one sounds delicious... enjoy!

Italian Burgers

1 medium onion, chopped $.25
1/4 cup Italian salad dressing (Ken's On sale W/C $.67) $.09
1 pound ground beef (On sale $1.99/lb) $1.99
4 hamburger buns, split (On sale Meijer brand $.99) .50


In a bowl, combine onion and salad dressing. crumble beef over mixture and mix well.Shape into four patties.Broil, grill or pan-fry until no longer pink. Serve on buns.

Meijer bargain meal of the week: Chicken Summer Pasta

I love light pasta dishes for summer time. This one sounds really easy and delicious. With chicken being on sale at Meijer for $.99/lb its hard to pass up! Happy Eating Y'all!!

Chicken summer pasta

6 ounces dry penne pasta (Meijer Pasta on sale $2/3) $.66
2 skinless, boneless chicken breast halves (On sale $.99/lb) $.99
1 1/2 cups fresh broccoli florets (Green Giant on sale .99) $.99
3 green onions, sliced (On sale 1/$3) $.13
2 tablespoons canola oil
lemon pepper to taste


Bring a large pot of lightly salted water to a boil. Add penne pasta and cook for 8 to 10 minutes, add broccoli a few minutes before pasta is done; drain.

Cook the chicken in a pan, seasoning with lemon pepper as it cooks. When the chicken is no longer pink inside, cut into small pieces. Combine chicken to pasta-broccoli mixture. Stir in oil and sliced green onion and add lemon pepper to taste.

Meijer bargain recipe of the week- Stuffed and Wrapped Chicken

Ok... I must be on a bacon kick this week!! :) (At least you can buy 1 pack of bacon and get 2 recipes from it !) This sounds like a dish that my family will love!! Happy Eating Y'all!!

Stuffed and Wrapped Chicken Breast


8 slices bacon (On sale $2) $1
6 ounces cream cheese, softened (On sale $1.50) $1.14
4 green onions, chopped .20
1/4 cup chopped red bell pepper (On sale .99/lb) .10
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon pepper
4 skinless, boneless chicken breast halves (On sale $1.99/lb) $1.99


Preheat oven to 350 degrees . Lightly grease a small baking dish.
Place the bacon in a large, deep skillet. Cook over medium-high heat until the grease has mostly rendered, but the bacon is still very soft, about 3 minutes. Remove, and pat dry with paper towels; set aside.

Stir together the cream cheese, green onions, bell pepper, garlic powder, salt, and pepper in a bowl until combined. Divide this mixture onto each chicken breast. Fold the breasts in half, and wrap with 2 slices of bacon. Secure with toothpicks as needed. Place into the prepared baking dish.

Bake in the preheated oven until the chicken is no longer pink in the thickest part, 30 to 35 minutes. Remove the toothpicks before serving.

Meijer Bargain recipe of the week- Savory Pork Chops!

This week Pork Loin is on sale at Meijers. I like to take mine to the in-store butcher and have them cut half of it into pork chops. The other half I use as a roast. This way I get two meals with one meat purchase! Happy Eating Y'all!

Savory Pork Supper


4 (4 ounce) boneless pork loin chops (On sale $1.69/lb) $1.69
2 tablespoons vegetable oil
1 tablespoon butter
1 1/2 cups sliced fresh mushrooms (On sale $1) $1
1/2 pound fresh green beans, cut into 2 inch pieces (On sale $.77/lb) $.39
1/4 teaspoon fresh rosemary(or 1/8 dried)
1 (10.75 ounce) can condensed cream of mushroom soup, undiluted .89

2 tablespoons water
1/8 teaspoon pepper
8 ounces uncooked fettuccine ( Creamette on sale $.79) $.56


In a large skillet, brown pork chops in oil and butter on each side; drain. Remove and keep warm. In the same skillet, saute the mushrooms, beans and rosemary for 2-3 minutes or until vegetables are tender. Stir in the soup, water and pepper; bring to a boil.

Top with pork chops. Reduce heat; cover and simmer for 10-15 minutes until pork juices run clear, stirring occasionally. Meanwhile, cook fettuccine according to package directions; drain. Serve with pork chops and top with sauce.

Meijer bargain recipe of the week- Fried corn with Smoked Sausage

This is one of my more expensive recipes that I have posted. It does however have 4 veggies in it, so I think its well worth it ! It is packed full of flavor and the kiddos will love it...Happy Eating Y'all!

Fried Corn and Smoked Sausage

2 tablespoons butter
1 onion, chopped .25
1 green bell pepper, chopped .99
1 red bell pepper, chopped .99
1 pound smoked sausage, cut into 1-inch pieces (On sale w/c $1.50) $1.50
1 (16 ounce) package frozen corn kernels (Freshlike on sale $1) $1
1/2 teaspoon seasoned salt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon Accent
1/8 teaspoon ground black pepper

Melt the butter in a large, deep skillet over medium-high heat. Cook the onion, green bell pepper, red bell pepper, and smoked sausage in the butter until hot, 1 to 2 minutes. Add the corn and reduce heat to medium; cover and cook until the corn is tender, 5 to 7 minutes. Season with seasoned salt, garlic powder, onion powder, accent, and pepper; toss to combine. Serve hot.

Meijer Bargain Recipe of the Week - Chicken Puffs

I look for several different things in a recipe. I like it to be somewhat kid friendly. I don't care for ingredients that you have to search high and low for and when there is not 105 ingredients! This recipe meets all my standards and I think it sounds awesome!! I hope its as yummy as it seams! Happy Eating Y'all!

Chicken Puffs

2 skinless, boneless chicken breast halves - cubed (On sale $2/lb) $2
3 tablespoons chopped onion .25
3 cloves garlic, peeled and minced
3/4 (8 ounce) package cream cheese $1
6 tablespoons butter
3 (10 ounce) cans refrigerated crescent roll dough (On sale $1.50) $1.50



In a medium saucepan over medium heat, slowly cook and stir skinless, boneless chicken breast halves, onion and garlic. Cook until onions are tender and chicken is lightly browned.

In a medium bowl, blend chicken mixture, cream cheese and butter until creamy.

Preheat oven to 325 degrees F

Unroll croissants and divide in half to create 12 rectangles. Place approximately one tablespoon of the chicken mixture on each rectangle. Fold into balls.

Arrange balls on a large baking sheet. Bake in the preheated oven 12 minutes, or until golden brown.

Meijer Bargain Recipe of the Week - Easy, Cheesy Zucchini Bake

Bargain Meal of the Week

This recipe was too easy to pass up trying. It also uses a great garden staple... zucchini! Feel free to experiment with spices according to your family's tastes! Serve over rice or noodles. Happy Eating Y'all!

Easy, Cheesy Zucchini Bake

1 pound ground turkey (On sale $1) $1
2 large zucchini, halved lengthwise (On sale $.88/lb ) $1.32
3 cups spaghetti sauce (Meijer on sale $1) $.75
1 8.75 ounce whole kernel corn, drained (On sale frozen Meijer brand $1) $.50
1 cup shredded Cheddar cheese blend (On sale $1.50) $.75


Spices to taste



Preheat oven to 350 degrees F (175 degrees C).

Melt a pat of butter in skillet and saute zucchini until slightly brown. Set aside. Brown turkey in same skillet over medium heat. Drain fat. (This is where you can add some garlic, onion powder or even some more spicy heat!)

Place halved zucchini slices in a baking dish. Pour the ground turkey, spaghetti sauce, and corn on top. Cover with aluminum foil.

Bake in preheated oven until zucchini are tender, about 20 to 25 minutes. Uncover, and sprinkle with cheese. Bake, uncovered, about 5 minutes.

Meijer Bargain recipe of the week- Tex-Mex Pasta Bake

I am all about casseroles! Especially ones that go in 13x9 inch pans. I divide them in 2 9x9 pans and pop one in the freezer for another time. When its been a day where the there is marker on the carpet, milk on the couch and not many nerves are left, I am thankful for not having to cook! This recipe looks delicious! Happy Eating Y'all!

Tex-Mex Pasta Bake


1 (9 ounce) package Creamed Spinach, defrosted according to package directions (On sale Green Giant 10 for $10 ) $1
1 (8 ounce) package cream cheese, softened (On sale Meijer 4 for $5) $1.25
5 cups cooked penne pasta (On sale .89) $2.22
1 (16 ounce) jar Salsa Mild (On sale Chi-Chi's 10 for $10) $1
1 pound ground beef, cooked, drained and crumbled (On sale $1.99 a lb) $1.99
1 (15 ounce) can tomato sauce .80
1 tablespoon chili powder
1 cup shredded Cheddar or Monterey Jack cheese (On sale 3 for $6) .90


PREHEAT oven to 400 degrees F.

COMBINE creamed spinach and cream cheese in medium bowl. Combine pasta, salsa, beef, tomato sauce and chili powder in large bowl. Spoon 1/2 of pasta mixture into 13x9-inch baking pan(Or 2 9x9 pans); top with spinach mixture. Top with remaining pasta; cover.

BAKE for 30 minutes; uncover. Sprinkle with cheese; bake for additional 5 minutes.

Total Cost of Meal: (After splitting) $4.58

Meijer bargain Recipe of the week- Baked Taco Chicken

I know, I know! Its summertime and I usually try to do grilling recipes. I thought this looked so good though! I could use some Spanish rice I purchased on sale and side it with re fried beans. When you have really little ones, sometimes chicken dishes are easier than ground beef. I hope its as yummy as it sounds! Happy Eatin Y'all!!

Baked Taco Chicken


1/2 cup all-purpose flour
1 package taco seasoning (McCormick on sale .59 ) .59
1/4 teaspoon salt
1 eggs .16
1 tablespoons milk
1 pound chicken (On sale $1.99 a lb) $1.99

In a large resealable plastic bag, combine the flour, taco seasoning and salt. In a shallow bowl, beat eggs and milk. Dip chicken pieces in egg mixture, then place in bag and shake to coat. Place in a greased 15-in. x 10-in. x 1-in. baking pan. Bake, uncovered, at 350 degrees F for 55-60 minutes or until juices run clear.

Total Cost of Meal: $2.74

I am on a mission to find a good chicken fettuccine recipe! This one looks like a winner because it is easy. ( Who has time to make a complicated recipe?? ) With chicken being on sale, its perfect! Feel free to add some sauteed onion and garlic for an extra kick...... Happy Eating Y'all!

Homemade Chicken Fettuccine

8 ounces fettuccine pasta (On sale $1.50) .75
2 tablespoons butter
3 skinless, boneless chicken breast halves - cut into chunks (On sale $1.99 a lb) $1.99
8 ounces mushrooms, sliced ( On sale 1o for $10 ) $1
1 teaspoon garlic salt
1/8 teaspoon ground black pepper
1 1/2 cups heavy cream .99
1/4 cup grated Parmesan cheese (On sale $2.99) .74


Bring a large pot of lightly salted water to a boil. Add fettuccine and cook for 8 to 10 minutes or until al dente; drain.

In a large skillet, brown chicken and mushrooms in butter until chicken is cooked through. Season with garlic salt and pepper. Add whipping cream and cook until thick, stirring constantly. Add Parmesan cheese when at desired consistency. Serve over noodles.

Meijer Bargain Recipe of the week- Parmesan Chicken

Meijer has chicken drumsticks on sale for .99 a lb! Every time I look at them I think of hot wings... not exactly kid friendly. Then I found this recipe. Since drumsticks are perfect for little hands to hold and eat, I am super excited to try this out! Happy Eating Y'all!!

Parmesan Chicken

12 chicken drumsticks (On sale .99 a lb) $2
2 cups grated Parmesan cheese (Meijer brand on sale $2.50) $2.50
1 egg (On sale .98) .08
1 teaspoon ground black pepper
1 teaspoon salt


In a shallow bowl, mix together salt, pepper, and cheese. In a separate bowl, beat egg until lemon colored. Dip chicken in egg, coating well. Roll in cheese.

Bake at 400 degrees for 45 minutes, or until brown.

Meijer bargain recipe of the week- Quick and Easy Mexican Chicken

Bargain Meal of the Week

I love recipes that take 30 minutes or less. That's just about the amount of time I have to prepare dinner without someone being attached to my leg or throwing their little body on the floor in a heap of hunger. :) This recipe seems so simple that I had to try it out... happy eating!

Quick And Easy Mexican Chicken

4 skinless, boneless chicken breasts (Meijer chicken on sale $7.99 for 64 oz) $1.92
1 cup salsa (On sale $1 W/C free!)
1 cup shredded Cheddar cheese (Sargento on sale 3 for $6) $1
1 clove garlic, minced
1 pinch salt
1 pinch ground black pepper
1 pinch ground cumin


Preheat oven to 375 degrees .

Heat a greased skillet to medium. Rub chicken pieces with garlic, salt, pepper and cumin to taste and add to hot skillet. Cook until brown on both sides and no longer pink (10 to 15 minutes).

Transfer meat to 9 x 13 inch baking dish or casserole dish, top with salsa and cheese and bake at 375 degrees for 15 to 20 minutes (until cheese is bubbly and starts to brown.)

Meijer Recipe of the week- Honey Grilled Chicken

Here is another grilling recipe for Memorial Day. I love Chicken but get tired of the same ole' way I fix it! This sounded so yummy and easy.... Happy Eating!

Honey Grilled Chicken

2 tablespoons butter or margarine
1 clove garlic, chopped
1/3 cup honey .30

4 skinless, boneless chicken breast halves (On Sale $1.99 a lb) $2.98


Preheat a grill for medium heat.

Melt butter in a skillet over medium heat. Add the garlic, and cook until fragrant, 1 to 2 minutes. Whisk in honey and lemon juice. Reserve half for basting, and brush the other half onto the chicken breasts.

Lightly oil the grill grate, and place chicken on the grill. Cook for 6 to 8 minutes per side, turning frequently. Baste often during the last 5 minutes. Chicken is done when the meat is firm, and juices run clear.

Meijer bargain recipe of the week- Homemade Spaghetti Sauce

Bargain Meal of the Week

I have been wanting to try to make homemade spaghetti sauce forever!! My girlfriend does and then she freezes it in batches. Its frugal and tastes fantastic! I am going to try this recipe since sausage is on sale this week. This makes a big batch so although it seems expensive, I will only use about 1/3 of it, reducing the cost. Happy Eating!

I will not expense spices/oils since most of us have them on hand. W/C means with coupon.

Big Mamas spaghetti Sauce


1 onion, chopped (On sale 5 lb bag $2.69) .53
3 cloves garlic, minced
2 tablespoons olive oil
2 lbs whole tomatoes (On sale $1.49 a lb) $2.98
2 (6 ounce) cans tomato paste $1.20
2 tablespoons dried basil
1 tablespoon dried oregano
2 bay leaves
1 tablespoon white sugar
1/4 teaspoon crushed red pepper flakes (Adjust to taste)
1/4 cup red wine .60
1 pound Italian sausage (On sale Meijer sausage 2 for $5) $2.50

Meijer spaghetti (On sale .99 ) .99


Heat olive oil in a large saucepan or Dutch oven. Saute onions and garlic until tender, 2-3 minutes. Add remaining ingredients and simmer over low heat for 3 hours. (You can either crumble sausage or keep in chunks.)
Remove bay leaves before serving. Serve over hot cooked noodles.

Total cost of Meal $8.80. After dividing into thirds and freezing 2 parts.

Total cost of Meal: $3.59

Bargain recipe of the week- Pork with tomato and pepper sauce

Bargain Meal of the Week
Pork loin is on sale at Meijers this week. This recipe calls for it to be cut into think strips. I would suggest you freeze it just a little bit and cut the strips while its almost thawed but not quite. This makes cutting any meat so much easier!! Happy Eating!

I will not expense spices/oils since most of us have them on hand.

Pork Tenderloin with Tomato and Pepper Sauce

2 teaspoons butter
1 teaspoon minced garlic
1 (1 1/2 pound) lean pork tenderloin, cut into thin strips (On sale $1.79 a lb) $2.68
1 (14.5 ounce) can diced tomatoes and green chiles .99
1 teaspoon dried basil
1 1/2 teaspoons salt
1 1/2 teaspoons freshly ground black pepper
1/2 cup water
1 1/2 cups thinly sliced green bell pepper (On sale $1.29 a lb) .86
1 onion, diced (On sale .59 a lb) .40


In a large skillet, melt butter over medium-high heat. Stir garlic into sizzling hot butter, and then arrange as many sliced pork tenderloin strips as you can fit into the pan. Cook, turning occasionally, until browned on both sides. Remove from pan; set aside. Repeat with any remaining pork tenderloin strips.

Return all pork tenderloin strips to pan. Stir in tomatoes and season with basil, salt, and pepper. Cook until mixture comes to a boil, then reduce heat to low, and cover.

Meanwhile, heat water in a nonstick skillet over medium heat. Cook peppers and onion in boiling-hot water until vegetables are tender-crisp. Stir into pork tenderloin and tomatoes. Continue cooking until pork tenderloin strips are no longer pink, about 50 to 60 minutes.
