Works for me Wednesday: Scoop it up!

I was carrying dishes from our lovely patio dinner to the kitchen sink. Of course, I lost my balance and spilt a whole plate of corn, salad, baked potato.....on the carpet. I did a mental head slap (hey, my hands were full!) and ran to the kitchen for a paper towel.

My darling mother in law, whom I adore, said. "Honey, just get a spatula!" My first thought was "huh"? She then explained that the spatula would pick up everything without grounding things into the carpet. I tried it and guess what? IT WORKED!!!!


She said she has done this many times and it always works. She said she has even dropped a raw egg and it picks it right up without breaking it and makes a mess.

What a smart woman I have as my MIL !!!

Menu Plan Monday- Easy does it!

I keep waiting for things to slow down but I have the creeping sensation that it will only get worse :) We have gymnastics, hubby fishing trips and work schedules that make cooking sort of...errr... difficult. That means crock pot cooking and easy recipes. I am going to be trying what seems like a crazy simple crock pot chicken and I am anxious to see how it turns out! Do you have a simple recipe that is your "go to" for busy nights? Leave it in the comments to share with other busy mamas! Happy eating y'all!!

Monday: Crock pot chicken with carrots and onions (recipe below), broccoli, crescent rolls

Tuesday: chicken broccoli alfredo, salad, garlic bread

Wednesday: Leftover buffet- if its not movin, you can eat it !

Thursday: Slow cooker BBQ chicken sandwiches, baked fries, salad

Friday: Pizza Night!

Saturday: Teriyaki chicken, potato grill packets, asparagus

Sunday: Fajita steak kabobs w/ onions and peppers, tortillas, black beans and rice

Italian Crock pot chicken
4 chicken breasts
6-8 carrots, cut in strips
1/2 onion, sliced
1 c. Italian dressing

Marinate chicken in dressing for at least 2 hours. Put onions and carrots in crock pot, then chicken. Pour marinate over all. Cook on low for 6 to 8 hours.

The Summer of Yes


My little boy came up to me the other day and asked a crazy question. The question was "Can I have some ice cream" ? It was a crazy question because it was ten in the morning.

Anyone that knows me, even a little bit, knows that I am one for rules, traditions and routines. I think that they bring stability and harmony to a home and after all .....I am a first born! :) (We firstborns like to run the show and as a mama it has served me well.)

Until this summer.

This summer I have come to realize that there is power in saying yes to a child.

I looked at my little boy who was practically vibrating with excitement when I told him that he could indeed have the ice cream at ten in the morning. (After looking at me like I was pod person who just looked like his mama.)

I have to be honest that my gut reaction was to say "no" and I had a list prepared of the reasons why. Then I paused. Its summertime and we had no where to go. Was the lunch police going to come and ticket me? I thought it sounded good myself. So I got out three bowls and started a scoopin.

I explained that this was not an everyday thing but a special "yes thing". (I don't think he really cared what it was as long as he got the ice cream) We sat down and happily ate our ice cream talking about what we should do this week and what books we still needed to read in our library basket. There was giggling and ice cream spilled and lots and lots of chipped tooth grinning going on in my small kitchen. I loved every minute of it.

It got me thinking....how often do I say no to things that really do not matter? Is my saying no so much preventing him from hearing me say no to the REALLY important things?

I will tell you that we did have a nutritious lunch that day but it was pushed back a little later and he ate as much of it as if the lunch and ice cream had exchanged places. "Hmmmmm" I thought...interesting.

Yesterday, I let my 2 kids and their cousin make my whole front room into a fort with clean sheets that had just been washed. I smiled as I heard them plan what they would take in and what supplies were still needed. I would have to wash the sheets again. I would have to take it down and clean up said supplies. One of my funnest memories as a child, however, was being over my friends house and her mom letting us do this in her living room. It was as magical to me as Narnia.

Hearing whispered plans and hushed giggles coming from the living room made my heart skip a beat at the power of the word yes.

Of course I cannot say yes to everything but I have decided that this is the "summer of yes" for this mama.
Is it wrong that I am actually having as much fun as they are?

Works for me Wednesday: Cooling off corn quick!

Nothing says summertime like corn on the cob. In fact, going into a supermarket and seeing the bright green stalks is when I know summer has "officially" arrived!

My littles LOVE the stuff. What I do not love so much is their protests that its too hot to eat! I used to try running it under cold water only to get wrinkly fingers and hot spots on the corn.

It was a fluke that I discovered this.....


I simply put the cob in a large glass of ice water for a couple minutes and its totally kid ready.

Wildfire Bean recipe


Ok ladies...I found this recipe and I have to say that it was a BIG HIT on the 4th!! I am a sucker anyway for anything slowcooker but after tasting it...I am sold!


Slow Cooker Wildfire Beans

1 jar Bob Evans Wildfire BBQ sauce
1 package Bob Evans Express Bacon
1 (55oz) can baked beans
2 (16oz) can light red kidney beans, drained
2 Tbs molasses
2 Tbs mustard
1 small onion, chopped


Combine all ingrediants in a slow cooker. Stir well. Cover and cook on low for 6-8 hours.

Menu Plan Monday: Use those grilling leftovers!

4th of July was so much fun, but we are still recovering from all the food! We had all kinds of family over but our eye were bigger than our bellies. (Meaning a ton of leftovers!!) I have decided that we are wasting NOTHING! We are using the chicken in quesadillas, hot dogs in mac and cheese and hamburger patties in a recipe I cannot wait to try!!! Happy eating y'all!!!

Monday: Leftover chicken quesedillas with black beans and peppers

Tuesday: Beef Stroganoff Casserole (recipe below), mashed potato's, green beans

Wednesday: Mac and cheese with sliced hot dogs, mixed veggies

Thursday: Asian pork chops with snap peas and zucchini, egg rolls

Friday: Pizza night!

Saturday: Breakfast for dinner- Orange french toast, maple sausage, fresh fruit

Sunday: Fried chicken, wildfire beans (recipe tomorrow), salad, cole slaw

Beef Stroganoff Casserole
1 lb. left over hamburger patties
1 can Cream of mushroom soup; condensed
8 oz. Sour cream
1 can (small) black olives; sliced
1 can (small) mushroom stems and pieces
12 oz. Egg noodles


Cook egg noodles according to directions. Add hamburger patties, soup, sour cream, olives, mushrooms, and noodles and cook until heated through.

Ravioli lasagna!


Who doesn't love lasagna?

Who has the time to make it? :)

My girlfriend gave me this recipe and it instantly became one of our favorite dishes. My love grew for it when I realized how easy it was to freeze and take to new mama's. (Along with some frozen garlic bread and a salad.)

I hope you enjoy!


What you need: (Quantities depending on how much you would like to make)

bag of frozen meat filled ravioli
Jar sauce
Mozzarella shredded cheese

Lightly cover the bottom of your dish with some olive oil. (To avoid sticking)

Place a layer of the meat filled ravioli on the bottom of the pan.

Cover with sauce and then cheese.

Repeat.

Works For Me Wednesday: Firecracker hats and 4th of July drums!

This week my kids started to get that crazy look in their eyes. The one that says " I'm bored and I plan on entertaining myself by jumping on your last, dangling nerve."

You know the look.

So we busted out some craft supplies, invited over some friends and got down to business.

First we made firecracker hats. These were a big hit and use almost anything you have lying around the house!


Firecracker Hat

Take 2 sheets of newspaper, opened and fold the bottom two times. (You can make the width to fit your little ones head.) Cover the folded bottom part with tissue paper, construction or scrap booking paper and secure with glue stick or tape. Have your kids decorate it with pom poms, stickers and anything else you can find!


Turn the newspaper over so that the decorated side is on the table. Paint red and white strips or blotches covering the back of the newspaper. Let dry.



When completely dry, cut from the top to middle of paper in sections.


Wrap around your child's head and tape to fit.



Patriotic Drum

Take an old coffee can with lid and cover with any type of paper you would like. (We left ours long at the bottom so that we could have some funky fringe.)


Paint, sticker, decorate any way you would like!

Make two slits with a sharp knife in the lid. Thread wrapping ribbon through, making knots on the inside to secure.

Take a wooden spoon (I got a 4 pack at the dollar store.) and let your little one decorate that as well.

Menu Plan Monday: Happy 4th!


Happy 4th y'all!!! I always get excited to see our family and have great food. My wonderful sister-in-law introduced me to a great side dish to take to summer get together's. Its called cowboy beans and its delicious! (I have included the recipe at the bottom.) I hope you all have a wonderful Holiday!!!

Monday: Ravioli lasagna (easy recipe tomorrow!!!) spinach salad, garlic rolls

Tuesday: BBQ chicken, grilled asparagus, scalloped potatoes

Wednesday: Leftover buffet- you can have it....if I don't have to cook it!

Thursday: Tomato, basil and mozzarella panini, rosemary potatoes, sauteed snap peas

Friday: Pizza Night!

Saturday: BBQ chicken wraps (leftover chicken, lettuce, cheddar cheese and ranch dressing in a wheat tortilla.) Chips

Sunday: Cookout- ribs, coleslaw, potato salad, greens, cowboy beans. (recipe below)

Cowboy Beans

1 lb. ground beef
1 onion, chopped
1 green pepper, chopped
1 (14-1/2 oz.) can kidney beans, drained
1 (14-1/2 oz.) can pork & beans
1 (15 oz.) can tomato sauce
3/4 c. brown sugar, packed
2 tsp. white vinegar
2 tsp. mustard

Brown beef with onion and green pepper in a 12" skillet; drain. Add remaining ingredients: simmer for 15 minutes. Place in a slow cooker: heat on low for 3 hours.

Summer Learning Ideas!


I love my sons preschool teacher. She was a lovely lady and she was kind enough to send home some summer learning ideas. I thought since I thought they were so clever, I would share them with y'all.

The plan is every Friday to post a couple throughout the summer so that we can sneak in some "learning". (Mamas are sneaky people, I tell ya!)


* Practice writing your child's name. First letter capital and the rest lower case. No more all caps for kindergartners!

* Attend a Metro Parks program. (Which are free!)

* Visit your local museum of Art. (Sundays are free in most locations, I believe.)


* Count things. Have your child help set the table and count out the number of forks needed.

Works for me Wednesday: Freaky fruit :)

Looking for fun things to do throughout the summer can wear a mama out. (Well that and trying to do the hundreds of other things we do...in a day :) )

It was during a trip through the produce isle that my family decided on a new summer tradition. They love it so much, I thought we would share!

It was when we saw a round orange, spotted prickly "thing" in the fruit section. They were mesmerised. We have no idea what it was but it looked weird, gross and fun. A irresistible combination to bored children in the grocery.

"Why don't we try it?" I found myself saying.
I got looks of pure joy and disbelief. Alot of jumping and loud talking followed.

Since then we have decided that each week we would try a "weird" fruit or veggie. Nothing is off limits. (We feel downright exotic tapping into a coconut or enjoying a starfruit!)

Not only is shopping just a little more fun but the kids look forward to trying the new treat each week!!


And that totally works for this mama.
