Works for me Wednesday: What to do with all those freebies and samples

I get asked all the time what I do with all the free products and samples that I receive. I even had one friend ask me how many toothbrushes one person needs. My response was simple. They were totally free, so if I could donate them or have a stockpile then I am set!

I found another way to use all those freebies in a way that makes others feel good.
When we have out of town guests, I have started to fill a basket with goodies that any guest may need. Toothbrushes, soap, toothpaste, body spray, dental floss...all sorts of goodies. We let our guests know before they come that they do not need to bring personal items, that we will supply them. This saves them some hassle when packing and its a nice treat when they arrive!

Recipe Tuesday: Low carb peanut butter Pie


I was at my family reunion this weekend when one of my very favorite aunts was telling me about a problem. The problem was her lovely hubby who had a wicked sweet tooth and just happened to be diabetic. Add some other medical food restrictions and she was out of ideas for new dishes and snacks! I found this low carb peanut butter pie that sounded not only tasty but easy! So....this one is for you Aunt L !!!

Low Carb Peanut Butter Pie

1 cup no sugar added peanut butter
1 1/2 cups heavy whipping cream
1 8 oz package cream cheese at room temperature
Heaping 1/4 cup Splenda baking sugar
1 9 inch prepared graham cracker pie crust

Blend together cream cheese and peanut butter until mixed smooth. In a separate bowl, beat heavy cream and Splenda until very stiff. Check the sweetness and add more Splenda to taste, if necessary. Fold whipped cream a bit at a time into cream cheese and peanut butter mixture until blended. Scoop into pie crust, smoothing to edges. Chill for 4 hours.

Menu Plan Monday


I have decided that we are going to try to go meatless one meal a week! I figure if I am creative enough my family won't make too much of a stink! :) It will save us money and some cholesterol points for the hubs. This week I am going to try making penne pasta with basil and grape tomatoes from my garden and mozzarella chunks drizzled with balsamic. (There is just something so wonderful about using fresh ingredients that you have grown !!) If its half as good as it sounds we are in business..... Happy Eating y'all!!

Monday: Hawaiian chicken skewers (recipe below), brown rice, asparagus, corn on the cob

Tuesday: Tomato basil mozzarella pasta drizzled with balsamic dressing, spinach salad

Wednesday: Leftover buffet- if its in the fridge you can have it, but mama is not cookin!

Thursday: Pulled pork quesedillas with black beans and cheddar cheese, Spanish rice

Friday: Pizza night!

Saturday: Red white and blue burgers, corn, fresh salsa and chips

Sunday: BBQ beef sandwiches, baked fries, salad

Hawaiian Chicken Skewers
1 cup pineapple juice
1/2 cup packed brown sugar
1/3 cup light soy sauce
2 pounds chicken breast tenderloins or strips
skewers


In a small saucepan over medium heat, mix pineapple juice, brown sugar, and soy sauce. Remove from heat just before the mixture comes to a boil.

Place chicken tenders in a medium bowl. Cover with the pineapple marinade, and refrigerate for at least 30 minutes.

Preheat grill for medium heat. Thread chicken lengthwise onto wooden skewers.

Lightly oil the grill grate. Grill chicken tenders 5 minutes per side, or until juices run clear. They cook quickly, so watch them closely.

Free Red Box Code in Columbus Ohio

Tomorrow night I just happen to have a date night lined up with my love :) We have a gift certificate for a nice dinner out. (In which I will not have to tell anyone "no", cut any small chunks of food and actually get to eat my food while its hot. Imagine that!!)

We lined up the babysitter a week ago so I was thrilled to find a code for a free Redbox movie. (Good in Columbus Ohio only.) Now we get to do dinner and movie for free...am I a cheap date or what!!


In case you are not familiar with Red Box's they look like large pop machines in the front of stores. You run your credit card and they charge you .99 a day. ((I just love getting a movie for .99 since you can't get out of a video store for less than $5 anymore!!)) Really though, what is better than free?!?!

Input the code RBXCMBS into any machine in Columbus Ohio..... good only on Monday August 2nd. Get in your jammies, make some popcorn and put those kids in bed!
