Menu Plan Monday


My hubby is working alot of overtime this week so not too many fancy or complex recipes. The Hungarian stew however is one of my favorites! Serve it over mashed potatoes or egg noodles and your family will come running!! Perfect for the fall weather :) Enjoy!

Monday: Breakfast for dinner ( eggs, bacon, toast )
Tuesday: Shrimp and sun dried tomato pasta, garlic bread
Wednesday: Hungarian stew ( recipe follows) , cheddar biscuits
Thursday: Grilled Cheese, soup
Friday: Pizza Night!!
Saturday: Pot roast with carrots and red skin potatoes, green beans and homemade bread
Sunday: Fish, Mac and cheese


Hungarian stew

1/4 cup butter or veggie oil
1-2 med onions, chopped
1 1/2 lb stewing beef, cubed
1 tsp salt
1/2 tsp ground black pepper
1 tsp paprika
1/2 tsp marjoram
2 carrots, scraped and cut in 2" pieces
2 stalks celery, cut in 1" pieces
1 green pepper, cut up in 1" pieces
1-2 tomatoes, cut up
3/4 cup sour cream, for serving ( optional)

Heat butter, saute onions until soft and golden. Add beef, stir, then other ingredients. Add 1/2 cup water, cover, reduce heat and simmer about 1 hour. Stir occasionally and add water if needed. Taste for seasoning, cook until tender. This may take up to 2 hours. I add a couple beef bullion cubers for added flavor, if needed. Serve with noodles or potatoes.
