Bargain recipe of the week- Giant Eagle!

Bargain Meal of the Week

I love Lasagna but rarely have the time to make it. (My hubby does make a mean lasagna complete with red wine sauce which I need to post another time.) This is a skillet bow tie lasagna that is so easy and yummy that your family will beg for more! I like that it uses bow tie pasta because if you have little ones they can easily eat then with little fingers or forks. Hope you enjoy!

I will not expense spices/oils since most of us have them on hand. W/c means with coupon.

Skillet Bow Tie Lasagna

1 pound ground beef (On sale 1.99 a lb) $1.99
1 small onion, chopped (On sale .99 a lb) .20
1 garlic clove, minced
1 jar spaghetti sauce (On sale Ragu 4 for $5 w/c $1 off of 2 in Sunday paper 1/18) .75
1 tablespoon dried parsley flakes
2 teaspoons dried oregano
1 teaspoon salt
2 1/2 cups uncooked bow tie pasta (On sale San Giorgio 10 for $10) $1
3/4 cup small curd cottage cheese ( On sale Daisy brand cottage cheese 2 for $6) .75
1/4 cup grated Parmesan cheese

In a large skillet, cook beef, onion and garlic until meat is no longer pink; drain. Add the sauce, parsley, oregano and salt; mix well.

Stir in pasta; bring to a boil. Reduce heat; cover and simmer for 20-25 minutes or until pasta is tender, stirring once.

Combine cheeses; drop by rounded tablespoonfuls onto pasta mixture. Cover and cook for 5 minutes.

Total cost of this meal: $4.69

Add Salad (Framers market, fresh express on sale B1G1) .65 Total cost of meal:$5.34

I think everyone loves pasta :) We make lasagna in the crockpot and it's just wonderful. Just layer and cook on high for 4 hours.

Sounds like another great recipe! I definitely want to try this, but have a question. In the instructions, you mention tomatoes and tomato paste, but those are not in the list of ingredients (only spaghetti sauce). Are you substituting spaghetti sauce for the tomatoes/paste combination, or perhaps just forgot to add them to the list?

Thanks!

Lisa- you got it right girl! I just plugged in store bought sauce for the traditional paste etc. (I am all about saving time and hassle !!) I made the change in the directions... thank you so much for letting me know:) I needed some more coffee this morning!
