Menu Plan Monday: Happy 4th!


Happy 4th y'all!!! I always get excited to see our family and have great food. My wonderful sister-in-law introduced me to a great side dish to take to summer get together's. Its called cowboy beans and its delicious! (I have included the recipe at the bottom.) I hope you all have a wonderful Holiday!!!

Monday: Ravioli lasagna (easy recipe tomorrow!!!) spinach salad, garlic rolls

Tuesday: BBQ chicken, grilled asparagus, scalloped potatoes

Wednesday: Leftover buffet- you can have it....if I don't have to cook it!

Thursday: Tomato, basil and mozzarella panini, rosemary potatoes, sauteed snap peas

Friday: Pizza Night!

Saturday: BBQ chicken wraps (leftover chicken, lettuce, cheddar cheese and ranch dressing in a wheat tortilla.) Chips

Sunday: Cookout- ribs, coleslaw, potato salad, greens, cowboy beans. (recipe below)

Cowboy Beans

1 lb. ground beef
1 onion, chopped
1 green pepper, chopped
1 (14-1/2 oz.) can kidney beans, drained
1 (14-1/2 oz.) can pork & beans
1 (15 oz.) can tomato sauce
3/4 c. brown sugar, packed
2 tsp. white vinegar
2 tsp. mustard

Brown beef with onion and green pepper in a 12" skillet; drain. Add remaining ingredients: simmer for 15 minutes. Place in a slow cooker: heat on low for 3 hours.
