This week Krogers has a ton of Mexican ingredients for $1! I found a recipe for southwestern black bean soup using most of the ingredients on sale. It sounds delicious and I am assured that it is kid friendly !!! Happy Eating!

Southwestern Black Bean Soup
1 pound ground beef (On sale $1.77 a lb) $1.77
1 package taco seasoning mix .99
1 (15 ounce) can whole kernel corn, drained .89
1 (15 ounce) can black beans, undrained (On sale Bush's $1) $1
1 can diced tomatoes (On sale Ro-Tel $1) $1
1 1/2 cups water
1/2 cup sour cream (On sale $1 ) .25
shredded Cheddar cheese (On sale $1) $1
In a large skillet over medium high heat, saute the ground beef and drain the excess fat. Add taco seasoning, and stir. Reduce heat to low, cover and simmer for 10 minutes.
In a slow cooker over low heat, combine the corn, beans, tomatoes and water. Mix well. Add the seasoned meat and the sour cream. Raise heat to high setting and simmer for 20 minutes. Pour into individual bowls and garnish with shredded cheddar cheese.
Total cost of this meal: $6.90
Freeze leftovers for a yummy lunch and reduce the price of this meal!
